Today was National Cupcake Day™ and what a fun day!

National Cupcake Day is the most delicious way to show your support for animals in need of your help!

Start planning next year’s Cupcake Day party and Register online (it’s free!).

Simply plan to supply some delicious treats, and then invite co-workers, friends and family to attend in exchange for a donation to your SPCA or Humane Society of choice. It’s a super fun and easy way to “bake a difference” for the animals in your community who need you most.

Well, technically cupcake day started yesterday evening, in my kitchen. I baked and decorated two dozen cupcakes and three dozen pupcakes. This morning, Henry, Reese and I delivered those cupcakes to my office. Then we went to school! Yes, Henry was teaching one of the lessons this morning to two groups of children; toddlers and preschoolers. I helped by reading Henry’s book to the children for him.

Reese sat prettily on one of the teacher’s laps.

One of the children in the group had been bitten by a dog; when she learned that Henry would be meeting the children, the boy’s mother decided to come in for the meeting. I was very proud of Henry for making this child enjoy his time with a dog. I hope the boy’s mother felt more comfortable after witnessing the interaction.

After Henry had shared his story, he modelled for Dr. Angela – a vet who spoke to the children about what her job entails and how she might check the health of a dog. The children each had a turn to listen to Henry’s heart beat.

After their lessons, the children had lunch and decorated CUPCAKES!

The day’s collaboration raised close to FIFTEEN HUNDRED DOLLARS for the SPCA! A massive thank you to my coworkers for baking cupcakes and organizing the mad rush for sugar fixes in my absence so that Henry and I could share his message with the children.  THANK YOU, THANK YOU, THANK YOU!

It is my opinion that on this day everyone should enjoy at least one cupcake – guilt free! It’s for the BEST cause.

You are what you eat – so eat something SWEET!

Dogs too shall consume ‘pupcakes’ (recipe provided – you’re welcome).

HONEY PUPCAKES (with yogurt and peanut butter icing)

Ingredients
•½ c brown rice flour
•1 tsp baking powder
•3 tbsp organic vegetable oil
•⅓ c organic applesauce
•1 organic, free range egg
•2 tbsp organic (local) honey
•3 tablespoons organic plain Greek yogurt
•1½ tbsp organic, smooth peanut butter

Instructions
1.Preheat oven to 350 degrees F.
2.In a mixing bowl, stir the flour, baking powder, vegetable oil, applesauce, egg, and honey until well combined.
3.Insert cupcake liners into a muffin or cupcake pan. I used mini liners (small dogs) plus makes more treats! Use a teaspoon to spoon mixture into cupcake liners. Fill liners about halfway.
4.Bake for about 10-12 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
5.Allow cupcakes to cool to room temperature.

Icing: in a bowl, stir yogurt and peanut butter until mixture is smooth and creamy. I added some rice flour to stiffen it a bit and still look nice the next morning. Use a knife to smooth a thin layer of peanut butter frosting over each cupcake. We used a piping tip to fancy it up a bit.

Store in an airtight container in a cool, dry spot. Peanut butter frosting should be stored in the refrigerator and applied immediately before serving.

    I didn’t realize that today was support the SPAC or humane society day until just a few moments ago. I have a comment about the humane society. I have adopted several animals from there and they have always treated myself and the animals excellent. I have a stray cat I trapped over a month ago. The Windsor Essex Humane Society has taken phenomenal care of him. Today was the third attempt to get him fixed. The first two he was declined because he was so sick. So one month later, he’s fixed and now also very healthy. Thanks to the extraordinary care of the Windsor Humane Society. Today they were not even going to charge me for the work done to him because I have been paying for his meds and I have been taking care of him all month. I told them it was very kind of them but to give that gift to someone who really needed the money to take care of their animals. Their kindness just brings a warm glow to my heart. I am so happy Rudy is healthy and happy. Thank you to all the wonderful people who work at the humane society.

    Oh how awesome that Henry and Reese helped educated the children! Those cupcakes look good too… Mr. N has also previously been a demo dog for a dog safety workshop for children including a kid who had been bitten by a dog.

    I love that photo of Henry being examined. This sounds like it was a huge success in every way! Those cupcakes look amazing and like something that wouldn’t aggravate my dog’s allergies. I wonder if the US has something similar to this because I’d love to participate.

    Wow. That’s great. Fifteen hundred? Good job. I keep saying I’m going to participate in cupcake day but haven’t yet. I like the idea of pup cakes and I’m going to try this recipe. Even better if it raises $$ for the humane society… (both my cat and dog come from there).

      GREAT question Sherri. Most Greek yogurt is strained so has a thicker, icing consistency. Also, Greek yogurt has half the carbohydrates and half the sodium as other yogurts.

    Loved hearing about Henry’s day! How wonderful that you were able to have such a successful fundraiser. I think the best part of the day is the little one that was able to have a positive interaction with a dog. Kudos to Henry!

    I love this idea! Pupcakes would be perfect for a dog birthday. I wonder if I could find a recipe for frosting with chicken stock or something. Gracie does not like peanut butter or yogurt.

    I love cupcakes and my dogs love pupcakes! This is an awesome idea. That’s wonderful that you were able to raise that much money for animals in need. I keep telling myself that one day I’m going try a pupcake recipe for my dogs. This one sounds like one we can try. Thanks for sharing.
